Regarding mail.log:
I struggled with it few hours with ChatGPT help (struggling mostly with rsyslog) and nothing.
Simply Postfix stopped log to mail.log. Fortunately Amavis still is logging to zimbra.log so I'll just leave it as is. And I see what emails flowed from Amavis from zimbra.log.
As you suggested probably I overtweaked some settings. But I dididn't edit any files , just by commands and they don't look (from history)suspicious.
Anyway lets leave this case.
