According to what you describe this sounds much a lot as a consequence of having Apple Mail from iOS 18 connecting to imap.We have 1 user whose mailbox becomes unresponsive several times a week, other users aren't affected. The temporary fix has been to restart the Zimbra server.
This has been fixed in 10.1.4.
